Tasting profile
Structure: medium-bodied, low tannin, medium acidity, dry
Dellago is the Weissburgunder (Pinot Bianco) of Kellerei Bozen, the Bolzano cooperative formed by merging the St. Magdalena and Gries cellars. It is aged partly in steel and partly for around six months in large wooden casks, which gives texture without oak flavour. Yellow apple, pear and ripe yellow fruit with a hint of almond and white flowers, a creamy mid-palate and a fresh, long finish. Falstaff regularly scores it around 90–92 points. Serve at 10–12°C with asparagus, freshwater fish, veal or risotto.
