Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
Graubünden is Switzerland's serious Pinot Noir country — a warm, sheltered pocket in the Rhine valley where the föhn wind ripens fruit that has no business ripening at that altitude. The wines sit between Burgundy and Baden in style: medium-bodied and transparent, built on red cherry and wild strawberry with rose hip, a woodsmoke edge from judicious oak and a savoury forest-floor note that comes with a few years. Tannins are soft and the acidity high and clean, which is what gives these wines their length. Serve cool and give a young bottle half an hour open.
