Tasting profile

Structure: full-bodied, medium acidity, sweet

Pineau des Charentes is the Cognac country's own apéritif: fresh grape must from the Charentes vineyards is muted with Cognac before it can ferment, keeping its natural sweetness, and then aged in oak. A Vieux has spent at least five years in cask, which deepens a white Pineau to gold-amber and brings dried apricot, honey, walnut, raisin and candied orange peel, with vanilla and toffee from the wood. Serve it lightly chilled, around 8–10 °C, on its own as an apéritif, or with foie gras, blue cheese or a walnut or apricot tart. It is ready to drink from the day it is bought and holds well in bottle; once opened, keep it in the fridge and finish it within a few months.
