A Toro red house swimming against its own tide — 100% Verdejo from Pozaldez vines at 750 metres, on brown stony soils rich in calcium and magnesium. Seven months on fine lees lend an unctuous middle that offsets the variety's cut: candied citrus peel and ripe pineapple over Verdejo's signature anise, finishing long on fennel. Fresh, saline and generous at once. Serve it properly cold, around 10–12°C, with fish or rice.
