Clos Windsbuhl is Zind-Humbrecht's walled site on the hill above Hunawihr, and the thing that defines it is limestone — a cool, late-ripening Muschelkalk slope that gives Riesling a taut, chalky spine rather than the smoky character of the domaine's volcanic and granite crus. Expect white peach and quince over lime zest, honeysuckle and a flick of ginger, with the biodynamic farming showing as depth of texture rather than weight. Most vintages carry a trace of residual sugar that the acidity swallows almost completely, so it reads dry at the table even when the analysis says otherwise.
