Aujourd'hui is a pale, dry IGP Côtes de Thau rosé from Domaine In Vinhys, a small estate near the Étang de Thau and Pézenas. The Syrah-based fruit is night-harvested, destemmed and pressed directly, then fermented cool in steel and kept on fine lees. Expect subtle pomegranate on the nose and a round, thirst-quenching palate of small red fruits; fine and easy, made for aperitifs, grills and summer salads.
