The Plouzeau family's biodynamic Chardonnay from a single hectare of thirty-year-old vines on flint and clay over limestone — a rarity in Touraine. Fermented and aged a year on lees in 500-litre casks, bottled without added sulphites, it is textured and nutty rather than crisp: baked apple, hazelnut and beeswax with a flinty edge. Being sulphur-free it is less forgiving of a warm cellar and shows its best with a few years, not many.
