Structure: full-bodied, medium tannin, medium acidity, sweet

A port-style fortified wine, not a table red. The base wine is fortified mid-fermentation with grape brandy, which kills the yeast and leaves substantial residual sugar, finishing around 18%. The grapes are the traditional Port varieties — Touriga Nacional, Tinta Cão, Bastardo, Alvarelhão and Souzão — with Tempranillo, which is Tinta Roriz in the Douro. Cooper's Hawk are explicit that it cannot be called Port: that name belongs to the Douro Valley alone. Made in the ruby register rather than tawny, so it keeps bright fruit rather than developing nutty oxidative character. Expect black cherry and blueberry over cocoa bean, chocolate, dried fig and toasted pecan, rich and velvety with a warming finish. The name was chosen by a staff member, after the bird.
