Ekam Essència is the selected-harvest, sweeter expression of Castell d'Encus's Riesling. Raül Bobet farms the estate high in the Pyrenean foothills near Talarn, at around 800 to 1,000 m, and ferments in medieval stone vats carved into the rock. Made with about 30 g/l of residual sugar and little botrytis, and held in bottle for several years before release, it shows lime, green apple and white peach with honey, beeswax and alpine herbs. Piercing mountain acidity keeps it fresh and age-worthy.
