**Kent** is a county in southeast England, long nicknamed the Garden of England, and one of the heartlands of the country's fast-growing wine scene. **Wines & grapes** — The specialty is traditional-method sparkling wine built from the Champagne trio of Chardonnay, Pinot Noir and Pinot Meunier; aromatic still whites, notably from Bacchus, are also made. **Character** — Kent's vineyards sit on chalk and greensand, the chalk belonging to the same seam that dips beneath the Channel and resurfaces in Champagne, and its cool, marginal climate preserves the high acidity that gives English sparkling wine its taut, refreshing edge. **Good to know** — Warmer recent vintages have made ripening far more reliable than a generation ago.
