Bobal

**Bobal** is a red grape native to eastern Spain, closely tied to the Utiel-Requena region inland from Valencia, where it has long been a workhorse of bulk production but is increasingly taken seriously. **In the glass** — it gives a deeply coloured wine with dark berry and plum fruit, notable freshness thanks to naturally high acidity, and firm, sometimes rustic tannins that reward careful winemaking. **Where it grows** — its stronghold is the high, continental plateau of Utiel-Requena and neighbouring areas of the Valencian and Castilla-La Mancha interior, where old bush vines yield concentrated fruit; historically much went into blends and rosé. **At the table** — pairs well with grilled lamb, chorizo and robust stews. **Cellaring** — everyday bottlings drink best young and fresh, while old-vine, more serious cuvées can develop over a handful of years.
