Tasting profile
Structure: full-bodied, low tannin, high acidity, sweet
Ausbruch is a Central European botrytis dessert style, historically Hungarian and Austrian, made by adding shrivelled noble-rot berries back to a base wine — richer than a Beerenauslese, lighter than a Tokaji Eszencia. From Muscat Ottonel, which brings its own intense grapey perfume to the honeyed concentration. Apricot, orange marmalade and honey with rose and dried citrus peel, full-bodied and lusciously sweet, with the acidity botrytis wines need to stop them cloying. A little goes a long way, and it keeps for weeks once opened.
