Albariño from Rías Baixas, grown on the Atlantic edge of Galicia where the sea air and granite soils give the variety its characteristic tension. Citrus and white peach with a saline, almost briny finish and a stony grip underneath the fruit. High acidity keeps it taut rather than merely fresh, and a little time on lees adds texture without softening the line. One of the great white wines to drink with shellfish, which is exactly what grows alongside it.
