Räuschling is the Lake Zürich vine — a natural cross of Gouais and Savagnin, once widespread across Germany and Alsace and now surviving almost nowhere else. Its nickname is the acid queen, and that is the whole character: piercing, mouthwatering acidity beneath delicate lemon, green apple and white-flower aromatics, light-bodied and dry. What surprises people is the ageing capacity — old bottles turn creamy and take on hazelnut and beeswax while the acid line stays intact, so this is a far more serious white than its lightness suggests. Whether malolactic is used varies by producer and softens the edge when it is.
