Txakoli from Getaria on the Basque coast, made from the two indigenous varieties — Hondarrabi Beltza, the dark-skinned one, with Hondarrabi Zuri. This is one of the most distinctive wine styles in Spain and almost nothing about it resembles the country's warmer regions: the vines grow on steep Atlantic slopes in a cool, wet, maritime climate, and the wines come out pale, low in alcohol, bracingly high in acid and often with a faint natural spritz. In Getaria they pour it from a height to raise that prickle. Expect wild strawberry and redcurrant with citrus zest, green herbs and a distinct saline snap. Dry and sharp rather than soft or fruity. Serve it very cold, ideally alongside the food it grew up with — anchovies, grilled sardines, pintxos, anything from the sea.
