Torrontés

**Torrontés** is a white grape best known as a signature of Argentina, particularly the high-altitude vineyards of Salta and the Cafayate valley in the north. It is really a group of related Argentine varieties, of which the most prized makes the country's most distinctive aromatic white. **In the glass** — it is intensely perfumed, with heady aromas of rose petals, orange blossom, jasmine and stone fruit. The palate often surprises by being crisp and dry, with fresh acidity and a light-to-medium body that balances all that floral fragrance. **Where it grows** — Argentina is its home, above all in the elevated, sun-drenched sites of Salta, where cool nights preserve its aromatics; it is also found in other Argentine regions. **At the table** — its aromatic character makes it a lovely match for spicy Asian dishes, ceviche and fresh salads. **Cellaring** — made to be enjoyed young, while its exuberant floral perfume is at its most vivid.
