**Palomino** is a white grape from Andalucía in southern Spain, the foundation of dry sherry and the classic base variety of the vineyards around Jerez. It is also known as Listán Blanco. **In the glass** — As a still wine it is fairly neutral, low in acidity and light in fruit, but under the sherry-making process it transforms — fino and manzanilla gain a bracing, salty, yeasty tang from flor, while oloroso styles turn rich, nutty and savoury. **Where it grows** — Its home is the chalky albariza soils of the Jerez region, and as Listán Blanco it is important in the Canary Islands, where it makes distinctive dry table whites. **At the table** — Dry sherry is superb with olives, almonds, jamón and seafood. **Cellaring** — Fino styles are best fresh, while oloroso and aged sherries can last for decades.
