Cornalin

**Cornalin** is an indigenous red grape of the Swiss Valais, also known there as Rouge du Pays, and regarded as one of the region's flagship native varieties. An old alpine grape whose exact parentage is not fully settled, it can be temperamental to grow, which keeps plantings small and prized. **In the glass** — it produces deeply coloured, spicy reds with dark cherry and berry fruit, a peppery, savoury edge and fresh acidity, combining alpine vibrancy with real depth. **Where it grows** — the warm, terraced slopes of the Valais along the upper Rhône are its true home, where careful growers coax reliable ripeness from difficult vintages. **At the table** — pair it with roasted and grilled meats, game and mountain cheeses. **Cellaring** — the best examples reward a few years of patience and can hold well in bottle, gaining spice and complexity.
